Celler Sabaté was founded in 2004, because the owner, Enric Sabaté wished to bottle his own wine. Previous to this he used to sell his wine to other producers but he, his father and his grandfather have been working on their vineyard since 1870 and he felt it was time to make his own.
The winery is located in Torroja del Priorat and has a special certification of the DOCG Priorat called "vi de vila" that means that the wines can only come from the vineyard of Torroja del Priorat. This is of particular interest becuase Torroja del Priorat is the very center of the Priorat (the center of the center) region and has very special conditions producing wines of record alcoholic strength between 16 and 17 degrees.
The 2009 is his first vintage and has only just been released. The wine itself is heady, rich and robust and has an alcoholic strength of 15.9%
Regarding the wine :
The grapes are cooled down to 2 - 3 degrees and then fermented in stainless steel tanks at 22 - 26 degrees for 18 - 22 days. They are then aged in small oak barrels for 6 to 9 months.
